Thoughtful preparation transforms a handful of dried herbs into something genuinely memorable. Here is everything you need to know.

Choose Your Herbs

Select dried or fresh botanicals suited to the season and your preference. Look for fragrant, vibrant herbs — dull or dusty ones have lost much of their character. Store loose herbs in airtight glass jars away from direct light.

Measure Carefully

Start with one heaped teaspoon of dried herb per 250 ml of water. For fresh herbs, double the quantity as their water content dilutes intensity. Adjust to taste over time — brewing is an exploratory practice.

Heat the Water

Temperature matters. Delicate florals such as chamomile and lavender respond beautifully to water around 80–85°C. Leafy herbals work well at 90°C. Bark, roots, and hardy spices tolerate a full 98°C without bitterness.

Steep Mindfully

Cover your cup or pot while steeping to retain the volatile aromatic oils. Most herbals are ready between 5 and 10 minutes. Taste at the shorter end first — over-steeping can introduce bitterness and mask the subtler notes.

Strain & Savour

Strain carefully through a fine mesh or linen cloth. Add a small amount of raw honey or a thin slice of fresh lemon if desired — but first taste the infusion as it is. Many herbals are complete without additions.

Chamomile

80°C · 5–7 min · 1½ tsp dried flowers. Avoid boiling — it destroys the delicate apple notes.

Spearmint

90°C · 4–6 min · 1 tsp dried or 2 tsp fresh leaves. Clean and vivid; do not steep beyond 8 min.

Ginger Root

98°C · 8–12 min · 3–4 thin fresh slices or 1 tsp dried. Simmer for a deeper, spicier result.

Linden Blossom

85°C · 6–8 min · 1 tsp dried flowers. Honey-scented; best enjoyed without additions.

Rose Hip

98°C · 10–15 min · 2 tsp dried shells. Fruity and tart — excellent chilled as an iced infusion.

Lavender

80°C · 4–5 min · ½ tsp dried buds. A small amount goes far — use sparingly to avoid bitterness.
